Softly
flavored with woodsy berry juice, Grether’s Pastilles have been around
for 150 years. The process for making these are a bit of a secret, but
deriving the ingredients, shaping and curing the pastilles takes three
months. The result is a subtle pastille, neither hard nor soft, that
coats the throat with soothing glycerin that won’t feel sticky the way
sugary lozenges do.
The
pastilles were originally developed to smooth the hard-working vocal
cords of singers and public speakers, but are great for sore throats and
coughs, or the parched dryness that comes from winter air, heaters and
air conditioners.
Blackcurrants are sweet, sharp, woodsy and highly nutritious berries.
The pastilles are stowed like the jewels that they are in gold tin box that you can keep using even after they’re gone.
The
original recipe was developed in England in the 1800s, but the
pastilles are now made in Switzerland, though Grether’s still sources
some of the ingredients from the same companies used by the original
makers.
Quality is assured by Swissmedic, the Swiss agency for therapeutic products.
The pastilles have a unique texture — they’re soft enough not to crack like hard candy, but aren’t meant to be chewed like a gummy bear. The pastilles will dissolve slowly in your mouth.
To
make Grether’s pastilles takes time, experience and the right
ingredients. Vegetable-based glycerin makes the pastille soothing to
your throat, and agar agar, a gelling agent made from ocean plants
(don’t worry — you can’t taste the sea in the pastilles) gives them
their smoothness.
Agar
agar makes the pastilles unique, but also makes is impossible to mass
produce. The pastilles are formed in wooden cases where they firm up and
mature for six weeks. The second phase of maturation develops the
pastilles flavor and shine.
