In the springtime, driving north on highway 99 through Central California is a kind of heaven. At just the right month when the acres of almond trees are in full blossom, the azure blue sky is offset by the almond trees' pink pillowy flowers, and the air smells of fresh, nutty almonds that are just about to fall to the ground in great fragrant rains.

The most nutrient-dense tree nut also makes one of the most savory, delicious extracts, second only to vanilla in its density of flavor. In fact, vanilla and almond flavors interchange extremely well, and sometimes you can't tell one from the other.

Add almond extract to a recipe where you normally just use vanilla, and begin to consider all the other ways you can put this deliciously fragrant, protein-rich extract to use. Pretty soon, a dash here, a dash there will not be out of place.

Use & Care

Folks who find whole bottles of almond extract on their pantry shelves one day are surprised to discover its welcome presence in most dishes. The company is audited annually by the American Institute of Baking from which it has received Superior ratings since 1990. The inspection involves a thorough review and analysis of the manufacturing policies and procedures throughout the production facility.
