Paprika literally means "pepper" in many European languages, but has come to refer to a mosaic of different chilies that are processed into potently flavored spice powders. The color of this paprika speaks to the ripeness of the fruit when harvested, essential to experience the floral aromatics of the chili. It is then delicately dried by smoking, turning it a vibrant brick red.
Grown in temperate climates, the most revered paprika is from Hungary and Spain. You might know it best as a sprinkled tint on deviled eggs, but traditional uses range from Hungarian goulashes to tapas such as "Papas Bravas."
Thrown it in while cooking or added to marinades, this sweetly smoky paprika will permeate anything it touches with earthy vibrations. As a garnish, it can be dusted lightly on almost any dish with egg, potato, or chicken.
As with any powder, keep it dry and away from light to preserve freshness.
