On a gas, electric, or glass-ceramic stove, the diffusion plate works as a simmer ring, providing a gentle, diffused heat that’s great for melting or preparing nuanced sauces that demand not only your attention but also nothing but the gentlest touch of fire. It works as a cooktop trivet to allow those tiny milk frothers and 2-cup stovetop espresso makers to securely stand on any kind of burner.
The heat diffuser also keep the licking flames or searing coils from staining the bottoms of your best cooking pieces, so it’s great for casserole dishes, show-boat cookware and anything else that’s good-looking enough to go from stovetop to table.
Own an induction stove? Remember the old video converters that could play a Beta in a VHS? The heat diffusion plate works like that, sort of, for making all kinds of cookware compatible with an induction stove. Case in point: your non-induction cookware made of aluminum, copper, and non-induction steel can only cook on an induction stove if you've got one of these heat diffusion plates.
This disk of brushed steel is made in Italy and etched in script. The two holes at the disk's edge are to insert the removable athermic handle to safely move the induction diffuser plate to and from the stovetop.
